This doesn't resemble a Poisson distribution, but that results from the averaging of 10 bias frames in each series. By doing this, the distribution is narrowed by factor square root of 10 (= 3.16), and this cannot be represented well in the histogram at a plot resolution of 12 bits - take a look at a plot resolution of 16 bits.
I guess the result is just fine: there is no obvious banding in the 'Diff' image, and the distribution seems to be extremely narrow as you can judge from the histogram.
However, the statistics of 'Diff' would be interesting as well. In this case the mean must be 0.1 (since you added 0.1 to the difference of the two images).
