PLEASE, let me ask again!....How can I get the "all process" window to open entire listing? For now all I get is a single column that I have to scoll down through to find the prcess I want to use.

if you are using macosx, you don't have to scroll.

from Process > <All Processes> you can type a key (or a series of keys) and the cursor will jump to that process. so for instance if you typed "scree" then the cursor would jump to ScreenTransferFunction, at which point you can just press return and the process will come up.
