All of the tutorials that I am finding seem to start with the 4 B/W files LRGB, or .fit files to start.
Is there a tutorial that steps through using my Color CR2 files, or how to convert them to fit files?

Hi Rich, there are many processing examples in PixInsight Resources that may be useful.
See here all processing examples but mainly this that goes through the preprocessing stages.

Hi Rich,

If you read this tutorial and you use PURE RAW as described in the tutorial, than you can simply put your .cr2 files into light, flat, bias, dark folders - or whatever folder names you use for the purpose. Also let  PI use  - as output file format - its native .xisf instead of .fits
