I have followed Harry's advice with a SBIG XCM2000 one shot color camera:

The resulting RGB image of M83 is completely grey. Have i missed something in the processing to obtain color in the image or is that just it for M83 without filter wheels to pick up difference emission spectra?

Hi,
there's a difference between an image that looks gray and one that really is. What does the histogram look like? If you see 3 separate lines/hills and they're not exactly the same then you have a color image. Processing will bring out the color.

There are three separate peaks with a slight difference between them. What steps after a histogram stretch is needed to bring the image out?

Ok so you have a color image that looks grey. You'll need to brighten it with a non-linear histogram stretch and possibly increase saturation with a curvetransformation. I'm pretty sure Harry has videos on these topics.
